A Taste Sensation Awaits

At Gran Sol Bar and Restaurant in the Basque Country, Spain, Pintxo Hondarribia offers a mouth-watering culinary experience.

This exquisite pintxo begins with a crisp toast base, topped with a delicate slice of foie gras.

A small portion of red pepper perfectly balances the rich flavor of the foie gras, adding a touch of sweetness and reducing its intensity.

Local Ingredients and Sophistication

Named after its homeland, this pintxo showcases the finest local ingredients.

Essential to its creation is the inclusion of Hondarribia’s prized smoked cod, a rare and sophisticated delicacy.

This choice of smoked cod, rather than the more common variety, elevates the dish, making it a standout on the menu.

The Perfect Finishing Touches

To complete Pintxo Hondarribia, the chefs at Gran Sol Bar and Restaurant add a drizzle of high-quality olive oil and a splash of balsamic vinegar.

These finishing touches enhance the flavors, creating a harmonious blend that delights the palate.

Pair this pintxo with a glass of Rioja red wine for an unforgettable dining experience.

A Personal Note on Ethical Choices

While this pintxo traditionally includes foie gras, I enjoy it without this ingredient.

I believe in making ethical choices and prefer not to consume products associated with animal suffering.

Despite this, Pintxo Hondarribia remains a delicious and satisfying dish that showcases the best of Basque cuisine.

Pyrenees hiking trail: Overpass the Coll of Contraix

Pyrenees hiking trail: Coll of Contraix

Pyrenees hiking trail: Overpass the Coll of Contraix

Introduction to the Adventure

Overpass the Coll of Contraix is a Pyrenees hiking trail that allows you to achieve personal milestones and brings great satisfaction.

For many, overpassing the Coll of Contraix in Aigüestortes National Park, Pyrenees, Spain, stands as a remarkable goal.

This ascent highlights the trek between the Ventosa i Calvell and Estany Llong mountain huts.

Pyrenees hiking trail: Overpass the Coll of Contraix

Starting the Trek: Day Five of the Aiguestortes Tour

On the fifth day of my Aiguestortes hiking tour, I lead the group toward the Coll of Contraix. For more details, please access here.

Previous days are crucial for bonding with participants and assessing their readiness for this challenging climb.

Conversations often revolve around the mythical Coll of Contraix, especially from those we encounter who have trekked it before.

Early Morning at Refugio Ventosa

Our day starts early at Refugio Ventosa, which serves the best breakfast among the park’s huts.

This mountain hut sits at the valley’s start, and our journey begins by descending to the stream feeding Lac Negre.

Initially, it seems there’s no exit, but after walking about 3km, an ascent path becomes visible.

Best hikes in the Pyrenees - Aigüestortes National Park - Pyrenees hiking trail: Coll of Contraix

The Ascent to Coll of Contraix

The direct ascent of 300m to the 2745m altitude of the Coll of Contraix is intense.

The hike from Ventosa i Calvell to the coll spans approximately 4km and involves a 600m elevation gain.

Along the way, we pass the trail to Punta Alta, the park’s highest peak at 3014m. One day, I hope to summit it with participants.

Hike up to Coll of Contraix

Navigating the Stone Blocks

The route is strewn with stone blocks, challenging our balance—a familiar scenario from previous days.

The trail steepens as we approach the coll. Walking uphill on gravel proves tricky, but soon, our steps become firmer, and we pull ourselves upward.

Hike up to Coll of Contraix

Reaching the Summit

Breathing intensifies as the coll draws nearer.

Finally, we reach the top, arms raised in triumph, celebrating a seemingly impossible achievement.

We enjoy a picnic, saving some for later after more challenges have passed.

Descending to Contraix Lake

The descent to Contraix Lake is no more straightforward than the ascent.

Carefully, we navigate the zigzagging path to the lake.

The remaining walk to our destination, the Estany Llong Refuge, is less demanding but equally picturesque.

The landscape resembles scenes from Swiss chocolate packages, with the constant sound of water and a majestic waterfall.

Encountering Tranquil Cows

As we descend, the clanging of cowbells replaces the waterfall’s sound.

Cows graze peacefully on the path, requiring us to navigate around them.

Their presence is a serene reminder of the area’s natural beauty.

Reaching Estany Llong Refuge

The Estany Llong refuge becomes visible half an hour before arrival, bringing mixed feelings of relief and irritation.

Yet, patience leads us there.

Completing the most challenging day of the Aiguestortes tour, covering 9.5km with 830m climbs and 1050m descents in 7 to 8 hours, feels triumphant.

Tired but satisfied, we toast to our success at dinner.

Conclusion: Celebrate Your Achievement

Overpassing the Coll of Contraix is an extraordinary accomplishment.

For those seeking adventure, consider staying at a hotel in San Sebastian to extend your Pyrenees experience.

This journey exemplifies living well, celebrating nature, and achieving personal goals.

Basque cuisine: Torrija at Bailara Restaurant in Bidania

A Culinary Gem in Basque Country

Experience Basque cuisine like never before at Bailara Restaurant in Bidania.

The renowned Chef Enrique Fleischmann helms this culinary haven nestled within the elegant Iriarte Jauregia Hotel.

Enrique Fleischmann, a master of Basque cuisine

His mastery transforms traditional dishes into extraordinary culinary experiences.

What Makes Torrija Special?

Torrija, the Spanish take on French toast, reaches new heights at Bailara.

A culinary masterpiece is not just well-executed in Chef Fleischmann’s version.

This isn’t your typical French toast. Instead of regular bread, he uses award-winning brioche, soaked in a luscious custard cream and grilled to perfection.

Enrique Fleischmann, a master of Basque cuisine

The Art of Pearls

What sets this Torrija apart are the exquisite amber and yellow pearls adorning it.

A craftsperson hand-crafts each pearl, imparting it with a unique texture and flavor.

One creates yellow pearls by dropping egg yolk into warm syrup and allowing them to cook gently.

I drop the amber pearls, made from syrup, into cold cooking oil, where they crystallize without sticking together.

This meticulous process results in pearls that enhance the dish’s flavor and texture.

A Symphony of Flavors and Textures

The final product is a Torrija with an impeccable structure—crispy on the outside, tender on the inside, and perfectly balanced.

It’s not overly sweet or greasy.

As you savor each bite, the amber pearls impart a subtle caramel flavor, elevating the dish to heavenly levels.

Too much snow on the Sierra Gredos – Spain

Too much snow on the Sierra de Gredos, Spain

Too much snow on the Sierra de Gredos, Spain

Challenging Conditions

Snow on the Sierra de Gredos in Spain creates a stunning yet formidable environment.

The wind blew fiercely, amplifying the wind chill and the dense fog limited visibility to just 50 meters.

Standing near the summit of Almanzor, the most challenging part of the climb still awaited us.

Unfortunately, the team wasn’t prepared for such harsh conditions, and pressing on seemed pointless.

Despite everyone’s eagerness to reach the top, the decision was clear: “THAT IS IT, GUYS… WE HAVE TO RETURN.”

It was tough to halt the adventure, especially knowing how far everyone had traveled, but it was the right choice.

Snow on the Sierra de Gredos in Spain

The Previous Day

The day before wasn’t exactly sunny either.

The fog lingered, providing a suitable backdrop for a snowy mountain ascent introduction.

I explained all the necessary techniques, making it a productive day. We spent the night at Refugio Elola, the local mountain hut.

I remember the hearty dinner, a Spanish twist on goulash, which was the perfect end to our day.

Snow on the Sierra de Gredos in Spain

An Early Start

We hoped for better weather on the climbing day, but nature had other plans.

That night, the weather turned for the worse.

I slept fitfully, as is common in mountain huts, where one can never fully gauge the outside conditions.

We set out at 5 am, just before sunrise, to take advantage of the hard snow.

By 8 am, the weather had become challenging.

We were about to face the mountain’s north side, known for its severe winds.

Snow on the Sierra de Gredos in Spain

A Difficult Decision

Half an hour later, I had the team roped to a rock, ready for the final ascent.

But I quickly realized continuing was too dangerous. The snow on the Sierra Gredos was relentless.

The mountain remains, waiting for our next attempt.

For now, enjoy this photo of Gredos in better weather and understand the beauty and challenge of snow on the Sierra Gredos.

We’ll return for another try.

Rebirth After Destruction

San Sebastian’s journey to prosperity began with its origins as a fishing town, safeguarded by the natural haven of La Concha Bay.

However, the city’s landscape dramatically changed after the devastating siege of 1813.

Portuguese and English troops defeated Napoleon’s army, leaving San Sebastian in ruins.

The city rose from its ashes, rebuilding itself into the architectural marvel we see today.

Royal Influence and Aristocratic Appeal

The city’s transformation attracted Queen Maria Cristina, who frequented San Sebastian for health reasons.

Her presence drew European aristocrats and wealthy individuals, setting the stage for the mid-19th-century construction of what is now Hotel de Londres y de Inglaterra.

Originally a private palace, it even served as a hospital during the Carlist Wars before becoming a hotel in the early 20th century.

Luxurious Accommodations

Today, this hotel in San Sebastian exudes timeless elegance.

The rooms boast classic decor and offer both luxury and comfort.

Guests can indulge in exceptional dining experiences at the hotel’s restaurant, where quality service and value meet.
